History with a Personal Touch – Establishing a Boutique Winery

“If this land has agriculture, this land is our homeland”
(Moshe Smilansky, one Israel’s first agriculturalists)

“Behold the rain which descends from heaven upon our vineyards, and which incorporates itself with the grapes to be changed into wine; a constant proof that God loves us, and loves to see us happy!”
(Benjamin Franklin)

In 2012, after some experience with wine production on a small scale, we decided to establish a winery to create quality boutique wines.

We have chosen to specialize in crafting red wines with a classic French and Italian influence through a blend of select varieties. These include Cabernet Sauvignon, Merlot, Marselan, Malbec, Petit Verdot, and Sangiovese grapes sourced from the Bin Nun Estate vineyard and from other Judean hills top vineyards with a prominent winegrower.

Our wine undergoes a meticulous production process, commencing in stainless steel tanks and then proceeding to traditional aging and refinement in French oak barrels. By employing natural production methods, we are able to transform grape must into exceptional, high-quality wine

Our Vision and Guiding Principles

The Vision

To produce unique and harmonious quality local wine, that awakens passion and joie de vivre.

Guiding Principles

Our unwavering passion for crafting exceptional, flavorful, and captivating wines serves as both our guiding star and our compass on this remarkable journey.

Passion – Our love for delicious food, bon viveur, inspiring music, and of course, excellent wine.

Conviction and Determination – To promote the vision

Quality – Creating unique wines with a clear mark of quality, as if every bottle was meant for us

ProfessionalismAt Bin-Nun Winery, we approach our work with professionalism, underpinned by extensive knowledge, meticulous attention to detail, curiosity, a commitment to continuous learning, and a dedication to innovation and creativity – all while honoring established winemaking traditions.

Kashrut – Every stage of production is carried out devotedly by religious Jews, supervised by Rabbi Shlomo Naftali of the Gezer Regional Council.

Music and Arts – As lifelong musicians, our journey has been shaped by a unique fusion of our love for jazz and a passion for free improvisation, all while holding deep respect for classical musical traditions. Just as we continue to find magic in music through playing, learning, and improvising, our winery’s vision is driven by our dedication to crafting exceptional, high-quality wines. We are committed to producing wines with a distinct local identity, offering an elegant and balanced flavor profile that seamlessly marries fruity aromas with the subtle, velvety nuances imparted by our oak barrels.

At our winery, the art of winemaking is harmoniously intertwined with the power of music, inspiring a sense of joie de vivre in all who visit. We proudly host renowned jazz artists for captivating performances in a series we fondly call “Jazz in the Vineyard”. These enchanting events take place in both our winery grounds and amidst the vineyards, creating a magical and intimate atmosphere for all to savor.
